Alternatively you could generate a macro which could sort and also perform other steps if you needed other functions performed at the same time. However you can easily set up a shortcut (2 keys minimum) to activate a sort as and when required.

There isn’t an auto sort setting in Notepad++ as far as I know. One of our clients is going through a routine audit with their regulatory body, and a question that we have never been asked before was posed by their IT person - what verification is being done by the patch management system (RMM software in this case) f.Is there a way to automatically sort text as integers descending everytime new data is added, or do I have to do it manually? Welcome to the Snap! It's Thursday already.

Specifically comma separated values, if you need it to be 'pretty' do it in Excel and suck it up, or convert to tab delimiters for readability's sake.

The issue here is you are asking for readability in a plain text format. Is there a solution for this that doesn't involve sucking it up and being in Excel all the time? I found a lot of references online to the now-defunct TextFX for this, and there are other plugins that handle most of what TextFX does - but it seems that this column alignment has been left out in the cold. In many cases I really don't need to do anything that warrants opening Excel, but I do need the columns to be aligned so that it's easily human-readable (which Excel does excellently and N doesn't appear to handle at all). I use Notepad to do a huge chunk of my day to day work, and one thing I have to deal with frequently is reading data from CSVs.
